Ingredients:
8 medium sized Potatoes
3 Tbsp Olive Oil
¼ Cup Parmesan Cheese
1 Tsp Dried Oregano
1 Tsp Smoked Paprika
1 Tsp Garlic Powder
¼ Tsp Salt
Method:
1. Preheat oven to 190 C and prepare a roasting pan by lining it with baking paper.
2. Wash the potatoes or peel them if you prefer to remove the skin, place them in a microwavable bowl and microwave potatoes for 1-2 minutes to soften enough to insert skewers.
3. Insert skewers into the potatoes and using a sharp knife, cut the potatoes by first cutting down to the skewer then twisting the potato and continuing to cut down to the end of the potato creating a spiralized potato.
4. Place the potatoes in the roasting pan. Pull the potatoes open to gaps between the cuts then brush with the olive oil.
5. In a small bowl, add the remaining ingredients and mix. Sprinkle the spice mixture over the potatoes until evenly covered.
6. Bake potatoes for 40-minutes, or until cooked through, turning the skewers over half-way to bake the other side. This may take longer to bake depending on the size of your potatoes.
All you need are potatoes and skewers, then you can have these spiralled potatoes at home! There are baked in the oven. I used metal skewers which makes it easy to cut the spirals, you could use wooden skewers if you are careful not to cut them or burn them. I placed 2 potatoes on each skewer.
