Tender slow-cooker carrot Lamb shank recipe

Ingredients:

4 Lamb shanks
2 spoons of flour
Handful finely chopped rosemary
1 big onion
4 garlic cloves, mixed
2 spoons of olive oil
1 can canned tomatoes
500ml mutton or beef stock
2-3 carrots, cubed
1 long celery stack, roughly chopped
Salt and pepper


Preparations:

*Dust the lamb shank with flour.

*In a large pot heat oil and brown the lamb shank then remove from the pot.
*In the same pot, saute onion and garlic.
*Add celery, rosemary & tomato paste.
*Mix well and add back the lamb shank.
*Pour in the canned tomatoes and stock.
*Cook slow on a low heat for 3 hours.
*The longer it cooks the more it concentrates the flavor and the sauce thickness.
*After 2 30min you can add in the carrots, season with salt and pepper.
